A delicious tomato, basil, and bocconcini cheese salad drizzled with olive oil and balsamic vinegar glaze. Perfect for a summer day!

Ingredients
- 2 large tomatoes (beefsteak)
- 1 cup fresh basil leaves
- 10-15 balls / slices of bocconcini cheese
- Salt and pepper to taste
- 2 tbsp olive oil
- Drizzle of balsamic vinegar reduction glaze
Preparation
- Slice tomatoes into 1/4″ thick rounds then cut slices in half.
- Roughly chop fresh basil leaves.
- Cut bocconcini balls / slices in half.
- Assemble tomatoes, basil, and bocconcini into alternating patterns on a plate.
- Sprinkle salt and pepper, drizzle olive oil, and drizzle balsamic glaze overtop.
- Serve right away, enjoy!
Tips
- If not serving immediately, omit steps 5 and 6 until ready to serve. Cover and refrigerate for up to 4 hours.
- Try different flavours of basil such as cinnamon, lemon, or lime basil for a new twist!
